Paleo Meatballs (From eatdrinkpaleo.com)
300g each of ground beef and pork
1 egg
1/2 medium onion finely chopped
1 table spoon olive oil
2 tablespoons chopped fresh parsley
2 garlic cloves finely chopped
1 teaspoon of sea salt
1/2 teaspoon black pepper
Coconut oil for frying
- Sautee onion in oil on medium heat 2-3 minutes
- Combine all ingredients including onion in a large bowl and mix with your hands. Kneed mix for a few minutes.
- Wet your hands and roll the meat into balls the size of a walnut in its shell.
- Heat large pan coated lightly with coconut oil. Brown each side then turn down to medium and fry 3-4 minutes. Flip and fry another 5 minutes.
