Paleo Cashew Butter Cookies (From allrecipes.com)
1/2 cup cashew butter
1/4 cup dried cranberries
1/4 cup chopped almonds/pecans
1 tablespoon coconut oil
1 egg
2 tablespoons pitted, chopped dates
1 tablespoon of honey
Preheat over to 350 degrees F
Mix together cashew butter, cranberries, nuts, coconut oil, egg, dates and honey in a bowl.
Throughly mix. Place spoonfuls of mixture on to a nonstick baking sheet.
Bake in preheated over until cookies smell toasted; 8-10 minutes. Allow to cool and harden.
Chocolate Butter Balls
1 cup cashew butter
1/2 cup maple syrup or honey
3/4 cup raw cocoa powder
Unsweetened shredded coconut or crumbled pecans
Combine all ingredients except coconut/pecans in a food processor and blend until smooth.
Pour mixture into a bowl, cover and refrigerate for 4 hours.
Use your hands to make small balls out of mixture.
Roll balls in shredded coconut or crumbled pecans.
