Roasted Butternut Squash (From www.allrecipes.com)
1 butternut squash - peeled, seeded, and cut into 1-inch cubes
2 tablespoons olive oil
2 cloves garlic, minced
Ground black pepper to taste
- Preheat oven to 400 degrees F (200 degrees C)
- Toss butternut squash with olive oil and garlic in a large bowl. Season with black pepper. Arrange coated squash on a baking sheet.
- Roast in the preheated oven until squash is tender and lightly browned, 25 to 30 minutes.
Garlic Rubbed Roasted Cabbage Steaks
1 head of green cabbate, cut into 1" thick slices
1.5 tablespoons olive oil
2-3 large garlic cloves, smashed
Sea salt
Freshly ground black pepper
Preheat oven to 400F. Grease a baking sheet with olive oil.
Pull outer leaf off cabbage, cut cabbage from top to bottom (bottom being root) into 1″ thick slices.
Rub both sides of cabbage with smashed garlic.
Use pastry brush to evenly spread olive oil over both sides of cabbage slices.
Sprinkle each side with a little salt (or you can omit the salt) and some freshly ground black pepper.
Roast on middle rack for 30 minutes. Gently flip the cabbage steaks and roast for an additional 30 minutes.
Edges should be brown and crispy when done.
